Turkey Schmear on Bagel with Volcano Mix

Microgreens aren't just for garnish - they serve as a great lettuce substitute in sandwiches, offering tender bites with visual appeal. Microgreens are an easy addition to assembly recipes because a little goes a long way in terms of volume and nutrition.
4 Everything seasoned bagels, or flavor of your choice
8 tablespoons cream cheese
4 slices muenster cheese
4 slices cheddar cheese
4 roasted red piquillo peppers (we used jarred but can make at home, too)
8 oz smoked turkey
8 slices cooked bacon
Mustard of your choice
Volcano Microgreen Mix
In a toaster or a pan, toast bagel halves to desired doneness. Smear top side with 2 tablespoons cream cheese. This will help keep the microgreens in place when assembled.
*Tip - use flavored cream cheeses for added flavor
On the bottom half, lay 1 slice each of muenster and cheddar. Add 1 roasted red piquillo pepper (a nice change from the classic tomato), 2 oz smoked turkey or deli meat of your choice, 2 slices of bacon, mustard, and a handful of microgreens. We used our Volcano mix for the earthy flavor alongside the smokey turkey and bacon and sweet pepper.
Tip with the other bagel half with the cream cheese. Cut in half for a beautiful cross section of your creation!
